Sweet Potato Macaroni and Cheese

Ingredients
  • 3 sweet potatoes spiralized
  • 1 tbsp vegetable oil
  • 2 cups Good Karma Flax milk
  • 1/2 cup Monterey style cheese (8 oz pack)
  • 1-1/2 cups cheddar style cheese (16 oz pack)
  • 1/4 cup Follow Your Heart Parmesan Style Cheese Alternative, shredded
  • 1 tsp ground black pepper
  • 1 tsp salt

Instructions
  1. Preheat oven to 350° F.
  2. Spiralize the sweet potato and set aside on paper towels so that any excess water is soaked up.
  3. In large sauce pan add oil and cook until sweet potatoes noodles are tender, 6 to 9 minutes. Transfer to a 9x13 glass baking pan.
  4. Meanwhile, heat flax milk and add cheeses until melted. Add “cheese style” sauce to sweet potato noodles and sprinkle with “Parmesan style cheese.” Bake at 350° F for 15 to 20 minutes or until “cheese” sauce is hot. Serve hot.

NOTE: Most of these recipes are vegan, but the alternate cheese can be swap for real cheese and milk.
