Roasted Savory Cauliflower

Ingredients
  • 1 head cauliflower cut in florts
  • 4 cloves garlic minced
  • 1 medium onion thinly sliced
  • 4 fresh sprigs thyme (or 1 tsp dried)
  • 3 tbsp olive oil
  • 1/2 cup Parmesan cheese shredded (or Follow Your Heart Parmesan Style Cheese Alternative)
  • 1 tsp black pepper
  • 1 tsp salt

Instructions
  1. Preheat oven to 425°.
  2. On a large baking sheet with a rim, toss cauliflower florets with onion, thyme, garlic, and oil, pepper and salt.
  3. Roast, tossing occasionally, for 35 to 40 minutes or until almost tender.
  4. Sprinkle with Parmesan cheese or Parmesan style cheese alternative, toss to combine, and return to oven to continue roasting for another 10 to 12 minutes or until cauliflower is tender.
