Ingredients
  • 1 lb. large whole grain orzouncooked
  • 2 tablespoons olive oil
  • 1 teaspoon salt(optional)
  • 3 cloves garlicminced
  • 2 cups green onionschopped
  • 4 cups grape size tomatoes or cherry tomatoescut in half
  • 1orange juice
  • 1lemon grated zest
  • 1 container (6 oz.) fresh Mozzarella cheesechopped
  • 1 cup cooked hamdiced
  • 6 fresh basil leaveschopped or 1 teaspoon dried ground
  • 2 avocadoscubed
Instructions
  1. Prepare orzo according to package directions. Drain and let it cool.
  2. Gently fold remaining ingredients. Garnish with a few more leaves sprigs, if desired. Serve cold.
