Ingredients
  • 1 cup quick oats uncooked
  • 1 (8 oz.) container plain fat free Greek yogurt
  • ½ cup honey
  • ¼ cup fat free milk
  • 3 tablespoons butter or margarine spread melted
  • 2 teaspoons grated lime peel
  • 2 egg whites lightly beaten
  • 1-1/2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (optional)

Instructions
  1. Heat oven to 375º F. Spray muffin pan with non-stick cooking spray or line 12 medium muffin cups with paper baking cups.
  2. In a large bowl, combine oats, yogurt honey, milk, melted butter and lime peel. Let 10 for 10 minutes to hydrate the oats. Gently, stir in egg whites.
  3. In a medium bowl, mix together flour, baking soda and salt. Add oat mixture to large bowls with oats mixture; mix gently, just until all ingredients are incorporated.
  4. Fill muffin cups half full and bake for about 15 to 18 minutes or until light golden brown. Cool muffins for about 5 minutes before removing from muffing pan.
