  • 1 teaspoon salt or 2 teaspoons salt free seasonings
  • 2 cups any combination of the following topping ingredients: green onions, green bell peppers, or tomatoes.
  • 1 ½ cups mozzarella cheese, shredded

Instructions
  1. Preheat oven at 350º F.
  2. Cut each tortilla into 4 triangles.
  3. Arrange in a single layer on a 9x12 baking sheet pan and bake at 350° F for 5 to 8 minutes or until crisp.
  4. Transfer crispy tortillas to an 8 x 8 baking dish or for larger/flatter pieces use 9 x13 glass baking dish. Pour egg substitute, seasonings and combined topping ingredients. Mix well and bake for about 10 to 10 minutes (or more if using a deep dish) or until eggs are firm. Serve with fresh cilantro or parsley, if desired.
