  • ½ cup vegetable oil
  • 2 eggs, whipped

  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • ½ teaspoon baking powder
  • ½ teaspoon salt (optional)
  • ½ cup mini chocolate chips (optional)

Instructions
  1. Heat oven to 325° F. Grease a loaf pan.
  2. In a large bowl, mix bananas, sugar, oil and eggs. Stir in remaining ingredients. Pour into pan. Bake for 1 hour and 10 minutes or until inserted knife comes out clean. Let cool completely before removing from pan and slicing.
