Ingredients
  • 1 tablespoon vegetable oil
  • 1 large onion chopped
  • 2 (16 oz./each) cans mild kidney or black chili beans
  • 1 can (14.5 oz.) crushed tomatoes
  • 1 (14 oz.) jar pasta sauce
Toppings
  • 3 cups whole grain elbow pasta, cooked
  • 3 cups any combination of the following salad vegetables of your choice, such as chopped lettuce, diced tomatoes, sliced cucumber, grated carrot, etc.
  • 1/2 cup guacamole
  • 1 cup low fat cheddar cheese shredded
  • ¼ cup fat free sour cream

Instructions
  1. In large saucepan, heat oil and sauté onion until soft.
  2. Stir in chili beans, tomatoes, and pasta sauce and heat through or heat in a slow cooker for 3 to 4 hours on low.
  3. Divide toppings among six plates and serve bean mixture over whole grain pasta topped with shredded lettuce, diced tomato, cucumber, grated carrot, grated cheese and sour cream on top.
